quiche recipe

Speaking of france & paris, here is an absolutely delicious quiche recipe some friends in southern paris served during my sunday lunch with them (and that i just made today). Enjoy!

Nancy’s Quiche

Ingredients:

1 pâte feuilletée (pre-made crust)
½ cup lardons or épaules fumés (ham cubes, but good ham like jamón serrano or prochuitto)
½ to 1 cup frozen spinach (i used fresh spinach, so the amounts here are cooked spinach)
6 eggs
50cl crème légère 15% matières grasse (like sour cream; i used creme freiche, but some type of cooking cream is more or less what you want)
1 tsp salt
¼ tsp pepper
1 tsp garlic powder
1 tbsp herbes de provence
200 grams shredded emmental (a type of mild, white cheese - i think you can find this just about anywhere)

Unroll pastry into quiche pan

In frying pan stir together lardons and frozen spinach until thawed and warm. Spread evenly on pastry. Sprinkle cheese on top of that.

Beat eggs in a bowl, then beat in crème légère, salt, pepper and garlic powder. Pour over meat, spinach and cheese.

Bake in 350 F or 175 C for 45 minutes.
